Just a quick update: I made these last night and just had them with my other half in the office today for lunch. The verdict: really good!
Here’s what I put in mine: 1 tsp chicken base, 1 tsp chopped chipotles, 1/3 c. diced tomatoes, 1/8 c. corn, 1/8 c. pintos (weird I know, but I didn’t have black beans on hand), 2 oz. cooked chicken breast, Chinese style wheat noodles, and cilantro, green onions, and lime for the ‘flavor pack’.
I know all the measurements might be a bit much but we are trying to lose a few lbs and this one clocked in a ~270 calories which is perfect for lunch.
I’ll definitely be trying the other variations. I was also thinking about adapting your kale, black eyed peas and sausage soup which is a favorite of ours too. Thanks again!!
