Basically, In-N-Out prides itself on its simple menu that allows for a surprising degree of customization through their “not-so-secret menu”.
The burgers are ordered on a (beef patty)x(cheese slice) basis. You can go up to 6×6, I believe. They used to allow for upwards of 100×100, but changed their policy.
Animal style means they cook the beef on the grill with mustard (which is actually pretty tasty), and along with the standard hand-leafed lettuce and tomato, add pickle, grilled onions, and extra spread, which is what they call their own secret sauce.
You can also order fries animal style, which comes with cheese, grilled onions, and spread.
